Abstract
In this chapter, we provide an overview of the various strategies for differentiating pluripotent stem cells into skeletal muscle, the main tissue type in meat. We discuss the challenges and opportunities regarding efficiency and costs they arise in the different parameters of cultivated meat production bioprocess: 2D versus 3D cultivation and directed differentiation versus direct reprogramming differentiation methods. We examine the various factors that need to be considered when selecting a particular differentiation strategy for cultivated meat production.
